My all-time favourite cracker and quite possibly one of the top 3 recipes so far in 2012. Endurance Crackers are extremely light and crispy while providing long-lasting energy. They are also vegan, gluten-free, soy-free, nut-free, sugar-free, and oil-free to boot. Feel free to change up the seasonings and spices as you wish (see the comments in the original post for some ideas) and serve with protein-packed hummus for a snack that will fuel you for the long haul. Man, I wish I had some right now!
I love agar agar and have used it to test out a cheese recipe! I, too, wonder why the double “agar agar” lol! So silly! But, hey, whatever! I’m dying over how gorgeous and vibrant these are and dang, I love how much healthier they are than the sugar-tastic ones full of crap at the grocery stores! My husband is not a big sweets fan, but he absolutely LOVES gummies, so I absolutely need to make these for him. He’d gobble them up super fast I’m betting…oh and me and Olivia would too. I love that you did 2 different flavors and I would be all over the orange ones. I love orange juice and syrup of course, so I’m practically salivating all over my keyboard looking at them and thinking about them. Totally serious. What a wonderful and easy recipe. This is more of a dessert than a snack but I still eat it for a snack quite often, especially during the summer. Oh man, it’s already worth making baked pears just because of how great the kitchen smells when you shove them in the oven. I made those today with lime flavour. I wanted sour candy and didn’t have citric acid… but now it’s in a mold (same kind of mold you used) in the fridge. I tried to get it out of the mold, but it’s not possible. it breaks. So is there a better way to get it out or didn’t I use enough agar-agar? Or is it not long enough in the fridge yet… what did I do wrong?

My first two flavor ideas here were orange and apple because I just love both of those juices, but the apple ones were not an attractive color. This is one of my favourite quick snacks, that is if you bake the acorn squash ahead of time. I like to include one or two baked acorn squash in my weekly food prep so they’re ready for snacks and meals during the week. My favourite fillings are peanut butter, yogurt and granola but you can also fill them with savoury ingredients like hummus, guacamole, quinoa, black beans, any mixture of those or anything else you can think of.
For a more substantial alternative to cookies, try these no-bake, oat-based bites, where almonds and almond butter pack in healthy fats to make them highly satisfying. Note that the dark chocolate drizzle on top adds a bit of time to the recipe, but as with most things chocolate, it’s totally worth it.
